Our Best Broccoli Salad
A classic side dish perfect for any holiday get-together or summer cookout!
I feel like broccoli salad was a staple in every potluck/get-together when I was a child (growing up in the Midwest). Now I don’t think anyone in my own little family would eat this, so it had been so long since I had had it. I decided to just on a whim make it for 4th of July a few years ago and I was so happy with my nostalgic treat.
What You Need:
For the Salad:
8 cups chopped broccoli
1/2 cup golden raisins
1/2 cup craisins
1/2 cup frozen peas, thawed
1/2 cup diced red onion
1 cup roasted salted sunflower seeds
8 slices applewood smoked bacon, cooked and chopped
For the Dressing:
1 cup mayonnaise
1/4 cup granulated sugar
1 Tbsp. apple cider vinegar
1 cup shredded Colby Jack cheese
Directions:
For the salad: In a large bowl, mix together broccoli, raisins, craisins, peas, and onion.
For the dressing: In a separate bowl, mix together all the dressing ingredients together.
Pour the dressing over the vegetables and toss well to coat.
Refrigerate for at least 2 hours.
Right before serving, add bacon and sunflower seeds. Toss to mix in.
