Crockpot Corn Casserole
This corn casserole is amazing with fried chicken or as a side for a cookout - especially since it’s cooked in the crockpot!
I could not tell you the first time I tried corn casserole, but I absolutely loved it AND I think it is the reason that I gave cornbread a second chance and now like it. This is basically a cornbread casserole and it’s so good. I could not get enough of it. I think it’s great as is, but it would probably also be ridiculously good with cheddar and jalapeno!
What You Need:
8 oz. cream cheese, softened
2 large eggs, beaten
1/2 cup granulated sugar
1 box (8.5 oz.) corn muffin mix
2 1/2 cups frozen corn
1 can (16 oz.) creamed corn
1 cup milk
2 Tbsp. unsalted butter, melted
1 tsp. seasoned salt
1/4 tsp. nutmeg
Directions:
Grease crockpot with nonstick spray or use a crockpot liner.
In a bowl, mix together cream cheese, eggs, and sugar.
Then add the remaining ingredients and mix well.
Pour into crockpot and cook on HIGH for 2 to 4 hours.
