Grilled Flank Steak with Cilantro Lime Butter
It’s grilling season and steak is the perfect thing to throw on the grill especially when it will be topped with delicious cilantro lime butter afterwards!
I’m so excited to start grilling again! Although I feel like I always wait until school is nearly out for my kids to start and by then, Tennessee is usually pretty hot. We definitely need to get an awning or something to cover our back patio so we don’t fry like lobsters while we’re grilling. Either way, I feel like our go to is usually burgers and I don’t typically do a lot of steak on the grill, but really we really loved this recipe and will definitely be making it a few times each grilling season! I love a good flavored butter and cilantro lime is such a classic flavor. It also goes really well on some grilled corn!
What you need:
For the Cilantro Lime Butter:
1/2 cup salted butter, room temperature
1 Tbsp. chopped fresh cilantro
1 Tbsp. fresh lime juice
2 tsp. lime zest
1 tsp. finely chopped green onion
1 Tbsp. minced garlic
For the Grilled Steak:
Canola oil
1 tsp. salt
1/2 tsp. ground black pepper
1 tsp. ground mustard
1 Tbsp. minced garlic
1 Tbsp. olive oil
2 lb. flank steak (or other cut of steak)
Directions:
For the butter: Take softened butter and stir in cilantro, lime juice, lime zest, green onion, and garlic.
Place butter on a piece of plastic wrap and form into a log. Place in the fridge for at least an hour or until firm.
For the steak: Brush grill with canola oil and preheat to HIGH heat.
In a small bowl, mix together salt, pepper, ground mustard, minced garlic, and olive oil. Rub onto steak.
Add steak to grill and cook for 3 to 4 minutes on each side for rare or up to 6 to 8 minutes on each side for well done.
Remove from heat and add pats of butter on top to serve.
