Copycat Oklahoma Joe’s Baked Beans
Grilling season is upon us - this baked beans copycat is perfect to have in your arsenal!
I’m so excited that the weather is warming up because I cannot wait to start the grilling season (once it stops raining here in Tennessee!). I made these baked beans way back in summer 2020 when we had the whole family in town (which includes my husband’s siblings, their spouses, their kids, my mother-in-law, my father-in-law and his wife). I have been waiting for an opportunity to make these again because unfortunately I am the only one in my immediate family that eats baked beans. My husband and kids don’t like them. So a cookout is a perfect excuse to make these. The original recipe is double this and made in the smoker. I do not have a smoker so I did my best to mimic it with my chosen ingredients. I made mine with apple juice (in place of bourbon because kids were eating it) but I recommend leaving it out. They were a little too soupy with it.
What you need:
2 cans (28 oz each) Bush’s Original Baked Beans (will try draining these next time!)
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) red kidney beans, rinsed and drained
1 1/4 cups Kraft Mesquite Smoke bbq sauce
1/2 red onion, finely diced
1 red bell pepper, diced
1 jalapeno pepper, diced
2 cups brown sugar
1/2 lb. bacon, cooked and chopped
Dash of liquid smoke (optional)
Directions:
In a disposable foil pan, mix together all ingredients.
Bake in a preheated 350 degree oven for 1 hour.
