Parmesan Garlic Roasted Potatoes
These roasted potatoes are an easy side dish that would be a perfect match for so many meals!
I have been making potatoes as long as I can remember. In middle school, I used to slice them into rounds and bake them in the oven to eat for lunch. When I was first married, I pan fried cubed potatoes all the time. Somewhere along the way I stopped making them regularly and when that happened, I somehow lost my ability to do them in a skillet. So we have turned to roasted potatoes in the oven. I feel like they are pretty foolproof and I love trying different recipes. This one is a pretty good one because it’s minimal ingredients but they turn out golden and crisp which is just how I liked my potatoes! The simple seasonings are perfect - truly the recipe does not have to be overly complicated to be great!
What you need:
2 lb. red potatoes, cut into 1-inch pieces
2 Tbsp. olive oil
1/2 cup grated Parmesan cheese
3 cloves minced garlic
1/2 tsp. oregano
1/4 tsp. salt
1/4 tsp. black pepper
Chopped parsley for garnish
Directions:
In a large bowl, stir together olive oil, Parmesan cheese, garlic, and oregano.
Add potatoes and toss to coat. Lay on a lightly greased baking sheet in a single layer.
Season with salt and pepper to taste (and additional Parmesan if desired.
Roast in a preheated 400 degree oven for 30 to 35 minutes until golden brown and crisp.
Serve topped with chopped parsley.
