Roasted Green Beans
These lemony roasted green beans are an easy side dish!
I am a huge fan of roasting veggies for a side dish and my go-to non-recipe is seasoned with salt, pepper, garlic with a little lemon zest or lemon juice. So this recipe isn’t too far off from what I know to be a tried-and-true method. I also love the addition of red onion and will definitely be doing the Parmesan and parsley next time!
What you need:
1 lb. green beans, rinsed and hard stems removed
2 Tbsp. olive oil
2 tsp. salt
1/4 tsp. black pepper
1 Tbsp. lemon juice
1 small red onion, thinly sliced, optional
2 Tbsp. Parmesan cheese, optional
Fresh parsley, optional
Directions:
Toss green beans and onion with olive oil on a rimmed baking sheet.
Season with half the salt and pepper.
Roast in a preheated 425 degree oven for 20 to 25 minutes or until tender (rotate your pan halfway through cooking).
Toss with lemon juice, Parmesan (optional), and parsley (optional).
Season with remaining salt and pepper.
