Too Easy Cheesy Chicken, Broccoli, and Rice Casserole

A triumph of a recipe that uses a box of broccoli and cheese rice as the base and adds to it for a full meal!

This recipe is very simple, but packed with lots of flavor and the kids gobbled it up, which is always a plus - right, parents? :)

What you need:

  • 1 box Uncle Ben's au gratin broccoli & cheese rice

  • 2 cups boiling water

  • 2 boneless skinless chicken breasts

  • 1/4 tsp. garlic powder

  • Salt and pepper to taste

  • 2 cups frozen broccoli

  • 1 cup shredded cheddar cheese

Directions:

  1. In a 13x9x2-inch casserole dish, add rice, its seasoning packet, and boiling water; mix well.

  2. Nestle uncooked chicken into the rice and season with garlic, salt, and pepper.

  3. Cover with foil and bake in a preheated 425 degree oven for 30 minutes.

  4. Remove from oven, add broccoli and cheese. Cover again.

  5. Bake for 8 to 10 more minutes, or until chicken is no longer pink.
