Strawberry Shortcake Fudge
All the flavors of a classic strawberry dessert packed into the most delicious fudge!
I am definitely a creature of habit when it comes to making certain foods. Fudge is always a winter food, typically December. This means that it will take me decades to make all the different fudge recipes I want to make, but maybe I can remember that I can make foods any time I want and just do it. This recipe was something I made in 2020 along with another fudge recipe that I will hopefully share soon. I love strawberry sweets and strawberry shortcake in particular is a favorite. I loved that this fudge incorporated a shortbread cookie crust! The Jell-O mix was an easy way to achieve the strawberry flavor. All-in-all, a very easy fudge recipe that is super yummy!
What You Need:
For the Crust:
2 cups shortbread cookie crumbs
5 Tbsp. unsalted butter, melted
For the Fudge:
3 1/4 cups white chocolate chips, divided
2 Tbsp. unsalted butter
1/8 tsp. salt
1 can (14 oz) sweetened condensed milk
1 jar (7 oz) marshmallow creme
2 to 3 Tbsp. dry strawberry Jell-O powder
1/2 tsp. shortening
Directions:
For the Crust: In a bowl, combine cookie crumbs with melted butter until well mixed.
Press firmly in a parchment paper lined 8x8 inch pan.
For the Fudge: In a large saucepan, combined 3 cups white chocolate chips, butter, salt, and sweetened condensed milk. Stir until melted and smooth.
Then add marshmallow creme and Jell-O powder. Stir until melted and smooth.
Pour fudge on top of crust and smooth out gently.
Refrigerate for a few hours until set completely.
Before cutting, place remaining 1/4 cup white chocolate chips with shortening in a microwave safe bowl. Heat for 30 seconds and then stir. Repeat until completely melted and smooth.
Place in a piping bag or zipper bag with a corner snipped.
Drizzle over the top of the fudge and top with sprinkles, if desired. Cut into 49 squares.
