Spicy Pork Brussels Bowls
A great, quick meal with pork and brussels all topped with a fried egg!
I’m a huge fan of brussels but a little bit skeptical on ground pork. Sometimes I am totally fine with it and other times, I really don’t like it. This was thankfully a time where it was great. The seasonings were really perfect and paired well with the brussels. Having a fried egg on top was just icing on the cake. This was really a simple but effective recipe. Not too time-consuming to make either!
What You Need:
Nonstick cooking spray
1 lb. ground pork
2 Tbsp. red wine vinegar
3 cloves minced garlic
1 tsp. smoked paprika
2 tsp. ancho chili powder
1 tsp. salt
1/4 tsp. cayenne pepper
1/4 tsp. ground black pepper
1/4 tsp. oregano
1/4 tsp. cumin
6 cups shredded brussels sprouts
1/4 cup chopped onion
4 large eggs
Directions:
In a large cast iron or heavy nonstick skillet over medium heat, spray with nonstick spray and add ground pork. Start to crumble.
Add vinegar, garlic, and all the dry spices. Continue to cook and crumble until no longer pink.
Remove from skillet to a plate.
Add brussels sprouts and onion to the skillet and cook over medium-high to high heat until brussels are tender crisp about 6 minutes.
Return pork to the skillet and mix everything together. Remove from heat.
Meanwhile in a nonstick skillet, spray with nonstick spray and cook eggs without breaking the yolks or breaking the yolks (your preference!).
Serve pork and brussels topped with a fried egg.
