Steak Fajita Pasta
This one pot meal is perfect when you’re craving fajitas but want pasta too.
This one pot meal is super yummy with seasoned beef, peppers, and onions to go with some penne pasta. It’s the best of both worlds with pasta and fajitas. Truly any one pot meal is just so nice to have on hand and I could see this being great with chicken or pork too.
What You Need:
1 1/2 tsp. dried oregano
1 1/2 tsp. ground cumin
1 tsp. garlic powder
1/2 tsp. chili powder
1/2 tsp. paprika
1/2 tsp. red pepper flakes
1/2 tsp. ground pepper
1 tsp. salt
1 lb. stir fry beef
1 Tbsp. olive oil
1 medium yellow onion, sliced into half moons
2 bell peppers, any color, sliced into half moons
2 cloves minced garlic
1 can (15 oz.) diced tomatoes
2 1/2 cups beef broth
3 cups dry penne
1/4 cup sour cream
Directions:
In a small bowl, combine oregano, cumin, garlic powder, chili powder, paprika, red pepper flakes, ground pepper, and salt.
Rub seasoning mix on meat to coat.
Heat olive oil in a large, deep skillet over medium high heat, then add meat and cook for about 5 minutes until browned and mostly cooked through. Remove to a plate.
Add onions, peppers, and garlic to the skillet. Cook over medium high heat for about 5 minutes. Remove to plate with steak.
Add tomatoes, beef broth, and pasta to the pan. Make sure pasta is covered by the liquid.
Bring to a boil and cook for 8 to 12 minutes, stirring occasionally. There will be a little liquid left in the skillet.
Add meat and veggies to the pan.
Stir in the sour cream and cook over low heat until heated through.
