I am a person who believes that it’s the toppings that make the burger. I really only want salt and pepper on my burger, but I occasionally will do garlic as well. This recipe is a very basic smashburger but then it’s topped with bacon, BBQ sauce, cheese, sauteed jalapenos, and these incredible, amazing, crispy onion strings. The batch of onion strings ends up giving you enough to have on the side and are magnificent. Such a great combo of toppings for the perfect smashburger!

What you need:

For the Crispy Onion Strings:

  • 1 large onion, sliced very thinly

  • 2 cups buttermilk

  • 2 cups all-purpose flour

  • 1 scant Tbsp. salt

  • 1/4 tsp. cayenne pepper

  • 1 quart canola oil

  • Black pepper to taste

For the Burgers:

  • 1 to 2 lb. ground beef

  • Melted butter

  • Salt pepper, and garlic powder

  • BBQ sauce

  • Shredded cheddar cheese, at room temperature

  • 1 lb. bacon, cooked

  • 2 jalapenos, sliced and sauteed in bacon grease

Directions:

  1. For the crispy onion strings: In a baking dish, add onion slices and cover with buttermilk. Soak for 1 hour.

  2. After the hour, in a bow, combine dry ingredients and set aside.

  3. Preheat canola oil to 375 degrees in a Dutch oven or fryer.

  4. Grab a handful of onions and add to flour mixture. Shake off excess and then add to oil.

  5. Fry for a few minutes until golden brown. Repeat with remaining onions.

  6. Slice onion very thin. Place in a baking dish and cover with buttermilk and soak for at least an hour. Combine dry ingredients and set aside.

  7. For the burgers: Form beef into 1/4 lb. balls.

  8. Brush melted butter on a griddle or cast iron skillet that has been preheated on medium-high heat.

  9. Place a ball of meat in the center and top with a piece of parchment paper. Press as hard as possible with a small skillet or pan to flatten meat. Hold for 10 seconds.

  10. Season with salt, pepper, and garlic pepper. Cook for 2 additional minutes, then flip.

  11. Spread BBQ sauce on top cooked side of burger. Then add cheese. Cover with a heat safe bowl to melt cheese and cook for 1 minute.

  12. Repeat with remaining beef.

  13. To assemble: Top burger with sauteed jalapeno slices, bacon, and fried onion strings.
