Rosemary Cauliflower Mash

This caulfilower mash is a great recipe to have in your rotation for side dishes!

Replacing potatoes with cauliflower is all the rage even years after the cauliflower craze started. I personally don’t care one way or another and have tried out a few of the cauliflower recipes just for fun because I like cauliflower. This recipe sounded really good with the cream cheese and rosemary. It was a great recipe (although I still prefer mashed potatoes) and one I’ll definitely make to mix it up here and there!

What You Need:

  • 1 head cauliflower, cut into florets

  • 5 Tbsp. cream cheese, softened

  • 3 Tbsp. unsalted butter, melted

  • 1 tsp. fresh rosemary, finely chopped

  • 1 1/4 tsp. salt

Directions:

  1. Bring a saucepan full of water to a boil. Add cauliflower and boil for 10 minutes or until fork tender. Drain.

  2. Add cauliflower to a food processor and process until broken down. Scrape down sides of the food processor bowl.

  3. Add cream cheese, butter, rosemary, and salt. Process until smooth.
