Quickie Quiche
A nice slice of breakfast pie with this bacon and cheese quiche.
Sometimes I think recipe names are a little silly and today I’m sharing one that is called “Quickie Quiche” but it would not be what I would classify as quick. However, it can be a little bit quicker than quiches normally take. I’m not completely sure where this recipe came from.
What you need:
1 (9-inch) refrigerated pie crust (or make your own!)
5 slices of bacon
1/2 small onion, peeled and chopped
1 cup shredded cheese
3 large eggs
3/4 cup milk
1/2 tsp. salt
Pinch black pepper
Directions:
Preheat oven to 425. Place pie crust into pie dish and bake for around 5 minutes.
Remove from oven and reduce heat to 375 degrees.
Sprinkle half of the cheese on the pie crust.
Meanwhile, cook bacon in large skillet until crispy and chop. Reserve a tablespoon of bacon fat in skillet.
Saute onions in the same skillet until softened.
Add bacon and onions into pie crust.
In a separate bowl, mix together eggs, milk, salt and pepper. Pour on top of pie crust.
Sprinkle with other half of cheese.
Bake at 375 degrees for 30 to 35 minutes.
