Peppermint Bark Cookies
Delicious cookies with lots of chocolate and peppermint - perfect for Santa!
Every year, I let my kids pick out a cookie they want to make for Santa. We typically make cookies just for us as well, but Santa gets something special. In 2020, these were the cookies that were chosen and since then, I have made them every Christmas (not for Santa but for us) because they were so well liked by my kids who had to, of course, taste test these for the big red guy. I have to say that they are such good cookies. They have loads of chocolate and peppermint flavor!
What You Need:
1 cup unsalted butter (2 sticks), softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 tsp. vanilla extract
1/2 tsp. peppermint extract
2 1/2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1 cup Ghirardelli bittersweet chocolate chips
7.9 oz. Ghirardelli peppermint bark squares, unwrapped and chopped
1/4 cup chopped candy cane pieces
Directions:
Cream together butter and sugars in a large mixing bowl for about 2 minutes, until light and fluffy.
Add in eggs and extracts. Stir to combine.
Add flour, baking powder, baking soda, and salt.
Fold in chocolate chips and peppermint bark pieces.
Scoop 2 Tbsp. sized balls of cookie dough and roll onto balls.
Then place onto a parchment paper or silicone mat lined baking sheet.
Bake in a preheated 350 degree for 8 to 10 minutes until tops start to set.
Top with a few extra chocolate chips and peppermint bark pieces, if desired.
Sprinkle with chopped candy canes and allow to cool for 5 minutes, then remove to a cooling rack.
