Loaded Mac Dogs
Who wants a regular hot dog when it can be loaded with mac and cheese and chips?!
The original recipe from Cravings utilized macaroni salad, which is a bummer because I’m the only one in my family that eats it. So my go-to substitute is always just regular macaroni and cheese. It usually fits in the situations where it’s needed and it was really great on this recipe. I will say that I did try the bbq chips even though they are not my favorite, but I would love to do a jalapeno kettle chip and really kick up that heat next time!
What you need:
1 box macaroni and cheese
2 Tbsp. chopped red onion
1 Tbsp. finely minced jalapeno
Salt and pepper to taste
2 scallions (both green and white parts), thinly sliced
4 hot dogs
4 hot dog buns
1/4 cup crushed BBQ potato chips, plus some
Softened butter
Directions:
Prepare macaroni and cheese according to box directions, then drain.
Mix in red onion and jalapeno. Season with salt and pepper to taste. Keep warm.
Meanwhile, cook hot dogs in desired method.
Butter hot dog buns and toast in a skillet or on the grill.
Top each bun with hot dog, macaroni and cheese, chips, and scallions.
Add any condiments you prefer, like ketchup, mustard, relish, etc.
