Cinnamon Crunch Banana Bread
Banana bread on a whole other level with a cinnamon crunch topping!
My husband and I love a crumble/streusel topping on breakfast or snack foods. I happened to have some bananas that were getting mushy and the time to make banana bread, so I chose this recipe because cinnamon crunch combined with banana bread was a match made in heaven. It was so nice to have that added crunch on top!
What you need:
For the Crumb Topping:
1/2 cup whole wheat flour
1/2 cup brown sugar
1 tsp. cinnamon
1/4 cup unsalted butter
For the Banana Bread:
1 3/4 cups whole wheat flour
1/4 cup cornstarch
2 tsp. cinnamon
1 1/2 tsp. baking powder
1/4 tsp. salt
2 large eggs
1 cup mashed bananas (about 2 bananas)
3/4 cup sugar
1/3 cup vegetable oil
1/2 cup plain Greek yogurt
Directions:
For the crumb topping: Combine flour, brown sugar, and cinnamon in a medium bowl.
Add butter and mix with fingertips until crumbs form. Then refrigerate until ready to use.
For the banana bread: Combine flour, cornstarch, cinnamon, baking powder, and salt in a large bowl.
In a separate large bowl, combine eggs, mashed bananas, sugar, vegetable oil, and Greek yogurt until well combined.
Pour wet ingredients into dry ingredients and fold until flour is moistened. Don’t overmix.
Place batter in a prepared greased and lined 9x5-inch loaf pan.
Top with crumb topping.
Bake in a preheated 360 degree oven for 50 to 60 minutes or until a toothpick comes out clean.
Let cool for 10 minutes before remove from pan to a wire rack.
