Italian Home Fries
The perfect potato side dish with Italian seasonings, peppers, and sausage!
Skillet potatoes have been a staple in my recipe arsenal since I turned 18 and was on my own. Prior to that, I used to bake slices of potatoes in the oven for summer meals for years. I love trying new recipes for something I really have never used a recipe to make. This particular potato recipe has bell peppers and sausage in it - it’s fantastic. I did use it as a side despite it having meat in it. I think it went super well with the roasted pepper & basil stuffed chicken.
What you need:
3 Tbsp. unsalted butter
3 cloves garlic, smashed into a paste with the back of a knife
1 small Spanish onion, halved and thinly sliced
1 small red bell pepper, diced
1 small yellow bell pepper, diced
1 1/2 lb. small new potatoes, par-cooked and diced
1/2 lb. Italian sausage (mild or hot), cooked
1 tsp. paprika
Salt and pepper
1 Tbsp. fresh rosemary, chopped
2 Tbsp. fresh flat leaf parsley, chopped
3 Tbsp. olive oil
Directions:
Heat butter in a cast iron skillet over medium high heat.
Add garlic and onions. Cook until softened for about 2-3 minutes.
Add peppers and cook for another 2 minutes.
Add potatoes, sausage, paprika, and season with salt and pepper.
Cook while stirring for about 2 minutes.
Stir in rosemary and press firmly into the skillet so bottom gets crispy and brown. Stir occasionally to distribute crispy bits.
Toss with parsley and drizzle with olive oil..
