Ham Pickle Salad

Leftover ham? No problem with this delicious Ham Pickle Salad recipe!

With Easter on its way, I figured I’d share a recipe that I made a few years ago. I cannot for the life of me remember if it was made with leftover ham but this would be a perfect way to use that up. The pickles go really well with the ham and they are a great match to go with a flaky buttery croissant.

What You Need:

  • 1 lb. cooked ham, diced

  • 2 hard boiled eggs, chopped

  • 1/2 cup mayonnaise

  • 1/4 cup chopped dill pickles

  • 2 Tbsp. diced onion

  • 2 Tbsp. yellow mustard

  • 2 Tbsp. chopped fresh dill

  • 2 Tbsp. chopped fresh parsley

  • 1 Tbsp. white distilled vinegar

  • Cracked black pepper to taste

  • 6 croissants

Directions:

  1. In a medium bowl, mix together ham, eggs, mayo, pickles, onion, mustard, dill, parsley, vinegar, and black pepper.

  2. Serve on croissants.
