Chicken Sheet Pan Quesadillas
Quesadillas with no flipping involved - and they are all done at the same time!
I love any excuse to not have to flip a quesadilla despite how much I love quesadillas. Sheet pan quesadillas are one of the easiest ways to make quesadillas because you lay all the tortillas out, fill it, cover it, and bake. Everything cooks all at once so there are no cold quesadillas while some are hot either. This particular recipe has a lot in the filling so it’s extra flavorful and substantial. I just love how colorful it is!
What You Need:
6 slices bacon, diced and cooked
4 scallions, thinly sliced and separate white and green parts
1 large red pepper, seeded and diced
1 large jalapeno, seeded and diced
6 cloves minced garlic
2 tsp. chili powder
1 tsp. ground cumin
Salt and pepper to taste
1 lb. cooked shredded or diced chicken
2 cans (15 oz. each) pinto beans, rinsed and drained
1/4 cup finely chopped cilantro
Melted butter or nonstick spray
Flour tortillas (10-inch)
4 cups shredded Mexican cheese
For Serving: guacamole, diced avocado, pico de gallo, red salsa, salsa verde, and/or sour cream
Directions:
In a large skillet with either a little bacon grease or a little butter, saute white parts of scallions with bell pepper and jalapeno. Cook for about 5 minutes, stirring occasionally, until softened.
Season with garlic, chili powder, cumin, salt, and pepper. Saute for 2 additional minutes. Transfer to a bowl.
Add bacon, chicken, beans, cilantro, and green parts of scallions to bowl with veggies. Stir together and season with salt and pepper to taste.
Lightly brush a 13x18-inch sheet pan with melted butter or spray with nonstick spray.
Arrange tortillas to cover the perimeter of the pan overlapping each other and the rim of the baking sheet. Place 2 tortillas over the center of the pan overlapping.
Add the chicken filling over the top of the tortillas and then top with cheese.
Place 2 tortillas over the center like you did on the bottom. Then fold the overhanging tortillas over the filling until covered.
Brush the top with melted butter or spray with nonstick spray.
Place another large baking sheet over the top to help weight it down.
Bake in a preheated 425 degree oven for about 20 minutes.
Remove the top baking sheet and bake for an additional 5 minutes.
Slice into squares and serve with desired toppings.
