Ground Beef Baked Tacos
Tacos served up with melty cheese is such a great way to enjoy them!
Nothing too crazy here but I do love baking the taco shells with the meat and cheese in it. The cheese being super melty is just fantastic. Then, of course, top the tacos with whatever fixings you like.
What You Need:
For the Tacos:
10 to 12 stand up hard taco shells
2 cups shredded sharp cheddar or Mexican cheese blend
1 lb. ground beef
1 small onion, diced
4 to 6 cloves minced garlic or 1 tsp. garlic powder
1 Tbsp. chili powder
1 tsp. cumin
1/2 tsp. smoked paprika
1/2 tsp. dried oregano
1/2 tsp. salt
1 can (16 oz) refried beans
1 can (4 oz) mild diced green chillies
1/2 cup salsa
Hot sauce or cayenne to taste
For the Toppings:
Shredded lettuce
Diced tomatoes
Avocado or guacamole
Sour cream
Cilantro
Salsa and/or hot sauce
Directions:
Place taco shells in a 9x13-inch baking dish. Divide 1 cup of cheese amongst the taco shells.
Bake in a preheated 350 degree oven for 8 minutes.
Meanwhile, brown ground beef with onions in a large skillet over medium-high heat.
Add all the seasonings and continue to cook until beef is browned. Drain, if needed.
Add refried beans, salsa, and green chillies and stir over medium-low heat until beans are fully incorporated. Season with salt, hot sauce, and/or cayenne to taste.
Divide taco meat amongst taco shells and the top with remaining 1 cup cheese evenly.
Bake at 350 for 15 to 18 minutes.
Top with desired toppings.
