Fajita Stuffed Chicken with Jalapeno Queso Sauce

This chicken is stuffed with fajita fixings and topped with an amazing jalapeno cheese sauce!

I have made something pretty similar to this in the past that is called Mexican Chicken with Jalapeno Popper Sauce. It’s one of my favorite meals, but it’s definitely simpler than this one. However, with that being said, it does not have the same seasoning mix nor is it stuffed with veggies. So really they are similar but not identical. If I have a little more time for making dinner, I am definitely going to make this recipe. I loved the seasoning rub and the jalapeno queso was fantastic!

What You Need:

For the Chicken:

  • 2 Tbsp. vegetable oil, divided

  • 2 red bell peppers, sliced into thin strips

  • 1 medium yellow onion, sliced into thin strips

  • Salt and pepper to taste

  • 3 cloves minced garlic

  • 4 medium boneless, skinless chicken breasts

  • 1 tsp. chili powder

  • 1/2 tsp. garlic powder

  • 1 tsp. ground cumin

  • 1/4 tsp. ground cayenne

  • 1 tsp. paprika

  • 1 Tbsp. unsalted butter

For the Queso Sauce:

  • 2 Tbsp. unsalted butter

  • 1 small jalapeno, finely minced

  • 2 Tbsp. all purpose flour

  • 1 cup reduced fat milk

  • 1/2 cup shredded pepper jack cheese

  • 1/2 cup shredded cheddar cheese

  • 1/4 tsp. ground cayenne

  • Salt and pepper to taste

Directions:

  1. For the Chicken: In a large skillet, heat 1 Tbsp. vegetable oil over medium-high heat. Add peppers and onion. Season with salt and pepper and cook until peppers and onion have softened.

  2. Add garlic and cook for an additional minute until fragrant. Remove from heat and let cool.

  3. In a small bowl, combine chili powder, garlic powder, cumin , cayenne, paprika, salt, and pepper.

  4. Create a pocket in each chicken breast. Rub seasoning mix all over chicken.

  5. In the large skillet from earlier, melt butter with remaining 1 Tbsp. vegetable oil over medium-high heat.

  6. Cook chicken for 3 to 4 minutes per side, flipping once until chicken is golden brown on each side but not fully cooked through.

  7. Then transfer to a baking pan and stuff seared chicken with pepper and onion filling.

  8. Bake in a preheated 375 degree oven for 20 to 25 minutes or until cooked through.

  9. For the Queso Sauce: While chicken is baking in the oven, melt butter in a small saucepan over medium heat.

  10. Add jalapenos and cook until softened.

  11. Whisk in flour until smooth and cook for 1 to 2 minutes, stirring occasionally until golden brown.

  12. Slowly add milk while whisking until fully incorporated.

  13. Continue to cook over medium heat until bubbly and thickened, stirring occasionally to prevent burning.

  14. Remove from heat and add cheeses with cayenne. Stir until cheese has melted. Season with salt and pepper.

  15. Serve chicken topped with queso sauce.
