Chocolate Waffles with Raspberry Sauce
Homemade chocolate waffles with a quick raspberry sauce to go on top!
We occasionally will have breakfast for dinner and that’s about the only time I will make breakfast recipes, despite me loving breakfast foods. I am just not a morning person and don’t like to be up early to make breakfast foods (with the exception of Christmas morning breakfast). I thought this recipe sounded great and I had never made chocolate waffles, so chocolate waffles were made! The raspberry sauce was super simple and the perfect compliment. We also topped ours with whipped cream, but that is totally optional. I think a bit of chocolate curls would be great on top as well!
What You Need:
For the Chocolate Waffles:
1 1/2 cups all purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1 cup milk
2 large eggs, beaten
1 tsp. vanilla extract
4 Tbsp. unsalted butter, melted and cooled.
For the Raspberry Sauce:
1/2 cup raspberry jam
1/4 cup water
Directions:
For the Chocolate Waffles: Preheat waffle iron, according to appliance directions.
In a large bowl, whisk together flour, baking powder, salt, sugar, and cocoa powder.
In a small bowl, combine milk, eggs, and vanilla. Then whisk in butter.
Add wet ingredients to dry ingredients and stir until just combined.
Pour batter into the waffle iron (again, use your appliance directions).
Cook until dark brown, following the waffle iron’s directions on how long to cook batter.
For the Raspberry Sauce: Meanwhile, whisk together raspberry jam and water in a small saucepan over medium-high heat.
Bring to a boil and cook for 2 to 3 minutes. Turn off heat and allow to thicken as it cools to warm (not hot).
Serve waffles topped with raspberry sauce and whipped cream, if desired.
