California Burritos

The tastiest burritos stuffed to the brim with steak, fries, pico de gallo, and more!

My husband used to travel to San Diego for work pre-pandemic and he loved all the food. He sent lots of pictures and we got to live vicariously through him. But even better is when he got home and suggested something Californian for the meal plan. One thing he requested was burritos with carne asada and fries in them. That was an easy win all around because what’s not to love about a burrito packed to the brim with steak, fries, and fresh pico de gallo!

What You Need:

  • 1/4 cup fresh lime juice

  • 3 cloves minced garlic

  • 1 tsp. salt

  • 1/4 tsp. ground cumin

  • 1/4 tsp. ground black pepper

  • 1 lb. steak of your choice

  • 2 Tbsp. vegetable oil

  • 4 large flour tortillas, warmed

  • 2 cups cooked French fries

  • 1 cup shredded cheddar cheese

  • 1 cup pico de gallo

  • 1 cup guacamole or chopped avocado

  • 1/4 cup sour cream or Mexican crema

  • Fresh chopped cilantro for serving

  • Hot sauce for serving

Directions:

  1. In a zipper bag, combine lime juice, garlic, salt, cumin, and black pepper. Add steak and make sure they are well coated. Marinate for 1 hour.

  2. Heat oil in a skillet over high heat, add steak and cook to desired doneness. Set aside and rest for about 5 minutes and then thinly slice (if not already, sliced).

  3. Assemble burritos by placing steak on tortillas and top with fries, cheese, pico de gallo, guacamole, and sour cream. Top with cilantro and hot sauce as well.

  4. Tightly roll up the burrito and serve!
