Armadillo Eggs
These jalapeno poppers are not just wrapped in bacon but sausage too!
Armadillo eggs are like jalapeno poppers on steroids. A lot of the jalapeno poppers I’ve made at home have been half a jalapeno and usually half a piece of bacon. These are a fully jalapeno wrapped in sausage with a full piece of bacon wrapped around it. They honestly didn’t take a ton of effort or time to make, so that was a huge plus!
What You Need:
8 jalapenos
4 oz. cream cheese, softened
1 cup shredded cheddar cheese
1/4 tsp. garlic powder
1 lb. ground breakfast sausage
8 slices regular cut bacon
Toothpicks
Directions:
Prep a baking sheet with foil and a baking rack on top of it.
Cut a thin sliver out of one side of each jalapeno. Carefully remove seeds and membranes.
In a medium bowl, mix together cream cheese, cheddar cheese, and garlic powder.
Fill jalapenos with cream cheese mixture.
Divide uncooked sausage into 8 equal pieces.
Mold a piece of sausage around each jalapeno.
Wrap a piece of bacon around each jalapeno and secure with a toothpick.
Place on prepared rack and bake in a preheated 400 degrees for 25 to 30 minutes or until bacon is crispy.
