TikTok Pasta

It may be past its height of popularity, but this baked feta and tomato pasta was viral for a reason!

I joined TikTok in early 2021 and missed some of the pandemic trending foods. I’m not sure if this was viral during that timeframe or if I actually caught it when it was viral, but I knew I had to make it. I also knew I would be the only person in my family who would eat it because no one else likes feta. Sometimes it’s really nice to make something that you know you will get all of - no one will be eating the last of your leftovers. I was pleasantly surprised at how this turned out and definitely want to try different variations and possibly even add a protein in there!

What You Need:

  • 2 pints cherry or grape tomatoes

  • 3 cloves minced garlic

  • 1/2 cup olive oil

  • Italian seasoning

  • Salt and pepper

  • Pinch of red pepper flakes

  • 1 block (8 oz.) feta cheese

  • 1 lb. short pasta

  • Zest of 1 lemon

  • Fresh basil, chopped

Directions:

  1. In a 9x13-inch baking dish, combine tomatoes and garlic. Toss with most of the olive oil, reserving 1 Tbsp. for feta.

  2. Season with Italian seasoning, salt, pepper, and red pepper flakes. Toss to coat.

  3. Nestle feta in the middle of the tomatoes and drizzle with oil.

  4. Bake in a preheated 400 degree oven for 40 to 45 minutes or until tomatoes are bursting and feta is golden brown.

  5. Meanwhile, cook pasta al dente. Reserve 1/2 cup pasta water and drain the remainder.

  6. Add pasta to baking dish with lemon zest and fresh basil. Stir and serve!
