Tamale Balls

These meatballs are total comfort food with all the flavors of a tamale served over rice!

This recipe from my mother-in-law is an oldie but a goodie. We actually hadn't made it since about late 2007. I told my husband not to forget that we have to make these more often. They are a pretty simple recipe. You just mix and let them cook. I'm going to try and figure out a way to make these in the crockpot because I always end up burning mine. I did manage to NOT burn them this time though - I stirred every 15 minutes.

What you need:

  • 1 lb. ground beef

  • 1 lb. mild Italian sausage

  • 1 1/2 cups cornmeal

  • 3/4 cup tomato juice

  • 1/2 cup flour

  • 1 tbsp. chili powder

  • 1/4 tsp. garlic powder

  • 2 tsp. salt

For the Sauce:

  • 5 cups tomato juice

  • 1 tbsp. chili powder

  • 2 tsp. salt

Directions:

  1. Combine all the non-sauce ingredients in a bowl.

  2. Roll into small balls.

  3. Place sauce ingredients into a large pot.

  4. Place balls into sauce. Cover and simmer on low for 2 hours.

  5. Stir every once in a while to prevent burning.
    Serve over rice.
