Sugar Cookie Chex Mix

The perfect sweet snack mix for any time of the year but especially during cozy season.

This week, I have a fun sweet Chex Mix recipe to share that we made really close to Christmas one year. Now, it’s much too early for a Christmas recipe - it’s definitely Halloween time up until the day before Thanksgiving for me. BUT! This recipe can be made with any colorway of sprinkles and eaten any time of the year because sugar cookies are all year round treats. I was really impressed with how simple this recipe was and how easily it comes together. And it was so hard to stop eating it because it was so yummy!

What You Need:

  • 6 cups Rice Chex cereal

  • 1/4 cup unsalted butter

  • 1/3 cup granulated sugar

  • 1 1/2 tsp. water

  • 2 tsp. vanilla

  • 1/4 cup powdered sugar

  • 1/4 cup white vanilla baking chips

  • Sugar sprinkles

Directions:

  1. In a 2 cup microwavable cup, microwave butter on high for 30 seconds or until melted after stirring.

  2. Stir in granulated sugar and water and microwave on high for 30 seconds or until smooth. Stir in vanilla.

  3. Add cereal to a large microwavable bowl. Pour sugar mixture over the top of the cereal and stir to coat.

  4. Microwave for 4 minutes, stopping to stir after every minute.

  5. Sprinkle powdered sugar on top and stir to coat.

  6. Spread onto a baking sheet that has been lined with waxed paper, foil, parchment paper, or a silicone baking mat.

  7. In a small microwavable bowl, microwave white vanilla baking chips on high for 30 to 60 seconds, stirring until smooth.

  8. Place in a small zipper bag and snip a small corner off. Drizzle over cereal. Top with sprinkles.

  9. Let cool until set for about 10 minutes.
