Soft Lemonade Cookies
These pillow soft cookies are the perfect summer treat!
I will start out by saying that I love lemon savory dishes and lemonade, but I’m typically not largely a fan of lemon sweets. I was a bit skeptical of this but wanted to try it because I’m always willing to try something and hope that maybe I do like it. These are lemony but not overwhelmingly lemony and I think that’s why I liked them. They are still very much a sugar cookie with lemon flavor. They are super duper soft! I think it would be interesting to try turbinado sugar next go around because the granulated stuff just disappeared when I rolled the dough in it.
What you need:
1 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
3 cups all purpose flour
1 tsp. baking soda
2/3 cup frozen lemonade concentrate, thawed and dived

Directions:
With a mixer, cream together butter and sugar. Add eggs, one at a time, mixing until incorporated each time.
In a separate bowl, whisk together flour and baking soda.
Add half of the dry mixture in. Mix well.
Then 1/3 cup (half) the lemonade concentrate. Mix well. Repeat with remaining dry mixture and lemonade concentrate.
Chill dough for 1 to 2 hours.
Take a tablespoon of cookie dough and roll into a ball. Then roll in granulated sugar.
Place on a parchment paper-lined cookie sheet.
Bake in a preheated 400 degree oven for 8 to 10 minutes.
Rest for a few minutes and then remove to a wire rack.
