Slow Cooker Zuppa Toscana Soup

A delicious copycat potato, kale, and sausage soup cooked in the crockpot!

This Olive Garden copycat is a go-to soup recipe for us. It isn’t super heavy and we love the potato and kale combo in a soup. I am always excited to find an old favorite made in the crockpot (or pressure cooker) because sometimes I just know I’ll be exhausted when I get home from work but I still want to make dinner. This has a little bit of prep work because you precook the sausage and do have to dice the potatoes. But realistically that may only take 10 to 15 minutes before you can have it in the crockpot ready to go.

What You Need:

  • 1 lb. Italian sausage

  • 1 small onion, finely diced

  • 2 cloves minced garlic

  • 3 cups chicken broth

  • 1 1/2 lb. russet or gold potatoes, peeled and diced

  • 3/4 tsp. salt

  • 1/4 tsp. black pepper

  • 1 pinch red pepper flakes

  • 3/4 cup heavy cream

  • 2 cups chopped kale

  • 1/4 cup shredded Parmesan cheese

Directions:

  1. In a large skillet, brown sausage with onion over medium-high heat.

  2. Add garlic and cook for an additional minute.

  3. Add sausage, broth, potatoes, salt, pepper, and pepper flakes to slow cooker.

  4. Cook on LOW for 4 to 5 hours or on HIGH for 2 hours.

  5. Once potatoes are fork tender, add kale, heavy cream, and Parmesan.

  6. Taste and adjust seasoning if needed.
