Slow Cooker Lemon Garlic Chicken
Creamy, flavorful, slow-cooked lemon garlic chicken that is perfect served over pasta or rice!
Now that my husband has turned me into a lemon fiend...I'm always searching for any kind of lemon garlic recipe out there. I love to use my slow cooker too...and anything that can include pasta - oh heck yes! The whole family really loved this recipe. The chicken was very creamy and flavorful :)
What you need:
1 tsp. oregano
1/2 tsp. salt
1/4 tsp. black pepper
2 lb. chicken breasts
2 Tbsp. unsalted butter
1/4 cup water
3 Tbsp. fresh lemon juice
2 cloves minced garlic
1 tsp. chicken bouillon granules
1 tsp. fresh parsley, chopped
1 pkg. (8 oz.) cream cheese
Rice or pasta, for serving
Directions:
Mix together oregano, salt, and pepper in a small bowl and rub onto chicken.
Melt butter on skillet over medium and brown chicken for 3 to 5 minutes on each side, then remove to crockpot.
In the skillet, mix water, lemon juice, garlic, and chicken bouillon. Bring it to a boil and then pour over the chicken in the crockpot.
Cook on HIGH for 3 hours or LOW for 6 hours.
Add parsley to the crockpot 15 to 30 minutes before it's done.
When chicken is done, remove from crockpot and let rest.
Meanwhile, add cream cheese to juices leftover in crockpot and stir.
Cook pasta to al dente or rice until done.
Ladle sauce onto cooked pasta/rice and then top with chicken.
