Quick 20-Minute Chicken Tacos
My family's favorite chicken tacos that we have more often than any other single recipe in my collection!
I have a lot of favorites on my blog, but this one is definitely high high up on that list. I have so many recipes hoarded that we often don't have the same recipe more than once in a 6 month period if not longer. This recipe...since the first time we had it, we have had it once a month since then. There was one month we had it twice. That never happens! It's a very simple recipe, but it's not one to be underestimated. It's the best spice mix for chicken tacos. You cannot beat fresh pico as well.
What you need:
For the Chicken:
2 lb. chicken breasts, cut into bite-size pieces
4 cloves minced garlic
2 Tbsp. lime juice
1/4 cup olive oil
2 Tbsp. chili powder
1/2 tsp. paprika
1/2 tsp. smoked paprika
1/2 tsp. garlic powder
1/2 tsp. onion powder
1 tsp salt
1/2 tsp. black pepper
Flour or corn tortillas
1 avocado, diced
Sour cream or Greek yogurt
For the Pico de Gallo:
1/2 cup finely diced onion
1 cup diced tomatoes
1/4 cup chopped cilantro
1 jalapeno, seeded and finely diced
Juice of 1/2 lime
Salt and pepper to taste
Directions:
For the chicken: In a large bowl or zipper baggie, add chicken, garlic, lime juice, olive oil, chili powder, paprikas, garlic powder, onion powder, salt, and pepper. Let sit for about 15 minutes.
In a large skillet over medium-high heat, add chicken and cook for 6 to 7 minutes or until cooked through.
For the pico de gallo: Mix together all pico ingredients and set aside until ready to serve tacos.
Heat or char tortillas, if desired. Serve topped with chicken, pico de gallo, avocado, and sour cream.
