Pete’s Scratch Pancakes with Pineapple

This pancake recipe is tried and true by a man named Pete and his family -- and now my family too!

This recipe comes from Bill Hilbrich who told his story of how he came upon it: "It was the Fall of 1987 when Pete Nyhus walked into our office, just to visit. We started talking about breakfast, and he reached into a wastepaper basket and pulled out a scrap of teletype paper. He wrote out this recipe, and my family has never used pre-mix since." The pineapple is my own touch. It could be substituted for any other type of fruit or even grated carrots or zucchini or candy. They are extremely fluffy and the taste cannot be duplicated out of a box :)

What you need:

  • 2 cups all-purpose flour

  • 1 3/4 cups milk

  • 2 Tbsp. baking powder

  • 2 large eggs, beaten

  • 1/4 cup (1/2 stick) butter, melted

  • 3 Tbsp. granulated sugar

  • 1 tsp. salt 

  • Can of crushed pineapple, drained slightly

Directions:

  1. Combine dry ingredients together in a bowl.

  2. Then in a separate bowl, combine eggs and butter to the milk. Slowly add in flour mixture.

  3. Fold in pineapple.

  4. Let sit for at least 10 minutes.

  5. Cook on a griddle or in a nonstick pan. Flip when bubbles appear and cook until both sides are golden brown.
