Hobo Dinner is one of our all-time favorite meals and I've made it more times than I can count. Recently for my picture retake, I decided to try out tossing the veggies with pesto and just seasoning the patty with salt and pepper. It turned out amazingly and I will definitely being doing it that way again. My favorite veggies to put in mine are potatoes, carrots, and zucchini. You can make it with red potatoes, gold potatoes, or russets. You can throw in pearl onions. The possibilities are endless. It can be served up with various condiments - we used to eat ours with ketchup, except for Nick who had buffalo sauce with his. **Picture Retake 9/8/13

What you need:

  • 1 lb. ground beef (makes 4 patties)

  • Potatoes, cubed (Russet, Yukon gold, red - any of them work - 4 servings worth)

  • 1 bag baby carrots

  • 2 stalks of celery, chopped

  • Vegetables of your choosing (whichever you like...we do zucchini, onions, green bell peppers, etc.)

  • Spices of your choosing (whichever you like - I have also started to put pesto in them and it is so good!)

**Note: Without spices, this recipe is an allergy-free recipe. No gluten, no dairy, no eggs.

Directions:

  1. Form 4 patties per 1 lb. ground beef. Place each one in the center of a piece of foil. Season the patties. 

  2. Add vegetables and season.

  3. Fold corners of foil up to make a little pack. Leave a little spot open on top for steam to escape.

  4. Place packs on a baking sheet and bake in a preheated 350 degree oven for 1 hour.

  5. Carefully open the packets -- they will steam. Allow to cool slightly and then serve with your favorite condiments, like ketchup, buffalo sauce, etc, if desired.
