Ground Turkey Quinoa Bowl
These ground turkey quinoa bowls are delish with Hoisin, soy sauce, and lime plus carrots and brussels!
My favorite thing about bowl recipes is that half the time, you can’t see all the ingredients in the bowl. There is definitely quinoa underneath the turkey and veggies, but you’d never know it! I’m a sucker for brussels, so I was excited to try this recipe where the veggies are carrots and brussels. It was a very solid and fairly quick recipe and gets a little bit of everything with a starchy carb, lean meat, and veggies!
What You Need:
1 cup uncooked quinoa, rinsed
1/2 cube or 1/2 tsp. vegetable bouillon
Zest of 1 lime
Juice of half lime (slice the remaining lime for serving)
Olive oil
Shredded carrots
Chopped brussels sprouts
Chopped scallions, diced, separate greens and whites
1 to 2 minced garlic cloves
1 lb. ground turkey
Low sodium soy sauce (to desired taste)
Hoisin sauce (to desired taste)
Sesame seeds
Directions:
Cook quinoa with bouillon according to package directions. When done, fluff with fork and add lime zest and juice. Season with salt and pepper.
Meanwhile, heat a drizzle of olive oil over medium heat in a skillet. Add carrots and brussels and saute until tender. Season with salt and pepper then remove from pan and set aside.
In the same skillet, add scallion whites and garlic. Cook about 2 minutes. Add ground turkey and cook while crumbling until no longer pink. Season with salt and pepper.
Add veggies to the skillet with turkey and mix. Add soy sauce and hoisin and mix.
Serve turkey and veggies over quinoa. Garnish with the green parts of the scallions, sesame seeds, and a wedge of lime.
