Grilled Chicken & Pineapple Quesadillas
A great recipe to utilize your grill in the summer with bbq chicken and fresh pineapple!
If you have never visited the Pioneer Woman's website...you might be crazy. Ree Drummond has an amazing plethora of different recipes and she is hilarious. I love quesadillas. Absolutely love them. I also love grilled (fresh) pineapple. This was probably the best meal I have had in my whole life. Thank you, Ree!!
What you need:
3 whole boneless, skinless chicken breasts
Salt and pepper, to taste
3 Tbsp. BBQ sauce
1 fresh pineapple, sliced into rings.
8 whole flour tortillas (I use Azteca)
Butter
3 cups Monterey Jack cheese, grated
1 whole jalapeno, sliced
Cilantro
Bacon, cooked and crumbled
Directions:
Season your chicken with salt and pepper (and any other seasonings, I did cumin and cayenne).
Grill your chicken until no longer pink.
Brush with bbq sauce. Remove from grill and slice into very thin slices.
Grill pineapple and then chop into bite-size pieces.
Toast and warm tortillas in griddle with the butter.
Place tortillas on a baking sheet. Then layer cheese, chicken, pineapple, jalapeno, cilantro, and bacon. You can drizzle additional BBQ sauce, if desired.
Top with another tortilla. Place in oven until cheese is melted.
Cut and serve!
