Greek Style Chicken Salad
This salad has Greek style chicken, cucumber, tomato, red onion, and feta - it’s fantastic!
I finally have my whole family liking Mediterranean/Greek foods which is an absolute win for me because I have been obsessed with them for the past couple of years. I think it was a win too because my picky youngest loves the Greek chicken! This is a fairly basic salad recipe with homemade Greek style chicken. But I think that it’s a great salad - you don’t always have to go super complex for a meal to be great.
What You Need:
For the Greek Chicken:
1 lb. boneless, skinless chicken breasts
1/4 cup olive oil
1 lemon, zest and lemon
2 cloves minced garlic
1 tsp. oregano
1/4 tsp. salt
1/4 tsp. black pepper
For the Salad:
6 cups lettuce, diced
1 cup tomato, diced
1 cup cucumber, diced
1/4 cup red onion, sliced
1/4 cup kalamata olives, sliced (we omitted)
1/4 cup feta cheese, crumbled
1/4 cup Greek salad dressing
Directions:
For the Greek Chicken: Marinate chicken in a bowl or zipper bag with olive oil, lemon juice and zest, garlic, oregano, salt, and pepper in the fridge for 30 minutes or up to overnight.
Grill or cook in a cast iron skillet over medium-high heat until cooked through. Set aside to rest for a few minutes before slicing.
For the Salad: Toss together all ingredients including sliced chicken.
