Family Favorite Slow Cooker Roast
Coffee and cajun seasoning are the perfect combo for a slow-cooked pot roast!
Anyone else here a crazy cat lady? Or just generally crazy about animals? We have two kitties: Bella and Muffin. Bella is my kitty, hands-down. She's prissy and motherly, very much a cat. Muffin, on the other hand, is my husband's cat and way more like a dog. Last night, she curled up in between my husband and I on her back sprawled up just like a dog - paws curled and everything. This distracted me from sleeping and I am in dire need of coffee this morning. I wish I would've gotten a picture! Now back to the food...
After trying this recipe, it isn't hard for me to understand why it is called "Family Favorite" - this roast was so tender and flavorful. I loved the Cajun seasoning (first time using it) and the coffee added so much more flavor to the roast as well.
What you need:
1 chuck roast
1 medium onion, quartered
4 to 6 garlic cloves, peeled and crushed
1 bay leaf
1/2 cup coffee
2 1/2 cups beef broth
2 Tbsp. flour
2 Tbsp. Cajun seasoning
3 Tbsp. vegetable oil
Directions:
Combine coffee and beef broth; set aside.
Combine flour and Cajun seasoning in a large baggie. Place roast in baggie, seal, and shake to coat.
Heat oil in a large skillet. Add coated roast and brown on each side.
Place onion, garlic, and bay leaf in slow cooker.
Add roast on top of onion, garlic, and bay leaf.
Deglaze your skillet with the broth mixture and pour over top of roast.
Cook on LOW for 8 to 10 hours.
