Easy Hot Chocolate

This single serving of hot chocolate is the perfect way to warm up on a chilly day!

It’s just now starting to get a bit on the chilly side here in Tennessee, although I fully expect another warm spike before we finally settle in colder weather for the season. I made this a few years ago because I think I’ve only made hot chocolate from scratch once. I didn’t really like it and that recipe was a large batch. This one is a single serving, so if it wasn’t great, it wasn’t going to waste too many things. However, it was great and I really liked it. I ended up making more for the kids who were a little jealous that I had a hot cocoa!

What you need:

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup sugar

  • 1 pinch of salt

  • 1/3 cup boiling water

  • 3 1/2 cups whole milk lower fat content milk will work, but will not be quite as creamy

  • 1/2 cup half and half

  • 1 teaspoon vanilla extract

  • Crushed Peppermint Candy Canes

  • Full Size Candy Canes

Directions:

  1. Combine cocoa powder, sugar, salt and boiling water in a sauce pan.

  2. Bring mixture back up to an easy boil, stirring constantly. Simmer, while stirring, for approximately two minutes. Keep a close eye on it and make sure it's a gentle boil to avoid scorching.

  3. Stir in milk and heat until hot, but do not boil. Remove from heat and add vanilla and half and half. Stir well.

  4. Top with marshmallows, whipped cream, chocolate sauce and Crushed Peppermint Candy Canes. Serve with a candy cane for stirring.
