Gooey Chocolate Cookie Butter Bars

Rich cookie butter bars with molasses and cinnamon - just perfect for the winter holiday season!

Good morning, everyone! I am sharing this easy dessert recipe today that I think is really perfect for winter months. The rich molasses and cinnamon together are such winter holiday flavors to me. The cookie butter is such a lovely complement to the warmness of the molasses and cinnamon. I, of course, love that there is chocolate added in too!

What You Need:

  • 1 cup creamy cookie butter

  • 1/2 cup light brown sugar

  • 1/3 cup granulated sugar

  • 1 Tbsp. vanilla extract

  • 1 large egg + 1 egg yolk

  • 1/4 cup molasses

  • 1 cup + 1 Tbsp. all purpose flour

  • 1 1/2 tsp. cinnamon

  • 1/2 tsp. salt

  • 4 oz. semisweet chocolate, chopped into chunks

  • Semisweet chocolate chips for topping after baking

  • Flaky sea salt for topping after baking

Directions:

  1. In a stand mixer with paddle attachment, beat cookie butter until smooth and creamy, about 2 minutes.

  2. Add sugars and vanilla. Beat another 2 to 3 minutes, scraping down the edges as needed.

  3. Add egg and egg yolk and beat until just combined.

  4. Add molasses and beat until just combined.

  5. Add flour, cinnamon, and salt. Mix on low until just combined.

  6. Fold in chocolate chunks to the very thick batter and mix until just combined.

  7. Line a 8-inch square baking dish with parchment paper or aluminum foil and spray with nonstick spray.

  8. Scrape batter into the baking dish and press down into an even layer.

  9. Bake in a preheated 350 degree oven for 30 to 32 minutes.

  10. Remove from oven and place on a cooling rack.

  11. Top with chocolate chips and sea salt.

  12. Let cool for 1 hour before slicing.
