Chicken Brown Rice Bowl

This niche copycat recipe is a great lunch or dinner for one!

I don’t share many single serving recipes because I’m typically cooking for my family, but this recipe was a perfect lunch and it turns out that it is a copycat recipe. Zinque is restaurant with locations in California and one in Arizona. This bowl is fresh with a delicious spicy yogurt dressing. Overall, simple yet effective.

What You Need:

For the Dressing:

  • 2 Tbsp. plain Greek yogurt

  • 1 1/2 tsp. sriracha

  • 1 tsp. water, to thin

For the Bowl:

  • 1 1/2 cups baby arugula

  • 1/2 cup cooked brown rice

  • 4 oz. cooked chicken breast

  • 1 oz. avocado, cubed

  • 6 grape tomatoes, halved

  • 1/2 oz. shaved or shredded gruyere cheese

  • Salt and pepper, to taste

Directions:

  1. For the Dressing: Combine yogurt, sriracha, and water together.

  2. For the Bowls: Add arugula to a shallow bowl.

  3. Layer with rice, chicken, avocado, tomato, and cheese.

  4. Season with a pinch of salt and pepper. Drizzle with dressing.
