Cherry Cheesecake Waffles
Dessert and breakfast together in one with these fluffy waffles topped with all the flavors of cherry cheesecake!
I feel like I get inspired most when I’m eating something and go “Ooh, this would be good like this” and that’s how this recipe was born. We often make brinner on the weekends when we run out of leftovers from the week. This usually means pancakes or waffles and scrambled eggs. I made waffles one week with whipped cream and fresh berries and immediately knew I wanted to make cheesecake waffles. Specifically, cherry cheesecake. These turned out even better than I had anticipated and I cannot wait to try some different variations of fruit to go with the cheesecake topping!
What you need:
2 cups Bisquick
2/3 cup plain or vanilla Greek yogurt
1 tsp. vanilla extract
1 1/3 cups milk
2 Tbsp. vegetable oil
1/4 cup graham cracker crumbs, plus some for serving
1 pkg. (8 oz.) cream cheese, at room temp
1/4 cup butter, at room temp
1/2 cup powdered sugar
1/2 tsp. vanilla

Whipped Cream
Directions:
Whisk together Bisquick, yogurt, vanilla, milk, vegetable oil, and graham cracker crumbs in a large bowl.
Pour batter by ladle into a preheated waffle iron. Cook until golden brown on both sides.
Meanwhile, beat cream cheese and butter together in a medium bowl until smooth.
Add powdered sugar and vanilla and beat until combined.
To serve, top waffles with some of the cream cheese mixture, cherry pie filling, a dollop of whipped cream, and additional graham cracker crumbs.
