Cheesy Potato Bacon Packets for the Grill
These potato packets are my absolute favorite side dish to make when I'm grilling because they go with everything!
These potato packets are something I could make with my eyes closed because I've made them so many times. Any time we have a cookout, I make these packets. It's a pretty simple thing to throw together too and it can even be done ahead of time. I also have made these in the oven when our grilling days get rained out.
What you need:
6 large potatoes, cubed
2 medium onions, chopped
1/3 cup parmesan cheese, grated
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
12 slices bacon, cooked and crumbled
6 tbsp. unsalted butter
2 tsp. seasoning salt
garlic powder
black pepper
Directions:
Divide the potatoes and onions equally between two pieces (about 18 inches each) of heavy duty foil that has been sprayed with cooking spray.
Sprinkle with seasoning salt, pepper, garlic powder and toss lightly with hands to coat with seasonings.
Combine cheeses in a small bowl; divide and sprinkle between the two packets.
Divide bacon and butter between two packets - sprinkle on top.
Fold foil over the top and crimp tightly
Make a small hole in the middle to let steam escape while cooking.
Place on grill over medium heat for 35 to 40 minutes or until potatoes are fork tender.
Note: These can be made ahead of time and refrigerated until ready to grill. You can also bake them in the oven at 425* for about 45 minutes.
